1 tablespoon olive oil or butter
2 leeks (white and light green parts), sliced
2 cloves garlic, minced
4 medium potatoes, peeled and diced
1 celery stalk, chopped
1 bay leaf
1 teaspoon sea salt (or to taste)
1/4 teaspoon cracked black pepper
1/2 teaspoon dried thyme or 1 tsp fresh
1 litre low-sodium vegetable or chicken stock
1/2 cup milk of choice (optional for creaminess)

Directions
Sauté the aromatics
In a large pot, heat the oil over medium. Add the sliced leeks and garlic. Sauté for 5–7 minutes until soft but not browned.Build the base
