Easy Apple Muffins with Collagen + ACV

Ingredients
Makes 10–12 muffins
2 medium apples, grated (skin on for extra fibre)
1 ½ cups plain wholemeal or spelt flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground ginger (optional)
¼ teaspoon sea salt
2 eggs
¼ cup olive oil or melted coconut oil
¼ cup honey or maple syrup
½ cup milk of choice (dairy or plant-based)
1 teaspoon vanilla extract
1–2 scoops Renovatio Collagen Plus+ Powder
Optional Add-ins
¼ cup chopped walnuts or pecans
A handful of sultanas or chopped dates
A sprinkle of oats or seeds on top for texture
Directions
Preheat the oven to 180°C (350°F) and line a muffin tray with paper liners.
Grate your apples and set aside. No need to peel them — the skin adds fibre and polyphenols.
Mix dry ingredients: In a large bowl, whisk together flour, baking soda, cinnamon, ginger, salt, and collagen powder.
Mix wet ingredients: In another bowl, whisk eggs, oil, honey/maple syrup, vinegar, milk, and vanilla.
Combine: Pour the wet ingredients into the dry, stir gently until just combined. Fold in the grated apple and any optional add-ins. Do not overmix.
Spoon into muffin tins: Fill each cup about ¾ full.
Bake for 20–25 minutes, or until a skewer inserted into the centre comes out clean.
Cool on a rack and enjoy warm or at room temperature. Store in an airtight container for 3–4 days, or freeze for later.
