Ingredients

1 tablespoon olive oil
1 small onion, diced
2 garlic cloves, minced
1 carrot, chopped
1 celery stalk, chopped
1 tablespoon tomato paste
800g can of whole peeled tomatoes (or 6 ripe tomatoes, peeled and chopped)
500ml vegetable or chicken stock
1 teaspoon sea salt (adjust to taste)
1/2 teaspoon cracked black pepper
1/2 teaspoon dried oregano or thyme
1 teaspoon raw sugar or honey (optional, to balance acidity)
1–2 scoops Renovatio Collagen Plus+ Powder
Basil leaves, olive oil drizzle, or Greek yoghurt for garnish (optional)
Directions
Sauté the base
In a large saucepan, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Cook for 5–7 minutes until soft and fragrant.Add the tomato
Stir in the tomato paste and cook for 1 minute. Add the canned tomatoes, herbs, salt, pepper, and a splash of sugar or honey if needed. Pour in the stock and bring to a simmer.Simmer & blend
Cover and simmer for 20–25 minutes. Remove from heat, then use a stick blender to puree the soup until smooth.Add collagen
Let the soup cool slightly (below 50°C), then stir in 1–2 scoops of Renovatio Collagen Plus+ Powder until fully dissolved. Avoid boiling after adding to preserve collagen integrity.Serve
Ladle into bowls and garnish with fresh basil, a swirl of yoghurt, or a drizzle of olive oil. Enjoy hot.
